Cooking a few roasted chickens on a spit roaster is an easy way to cook for a small group or a large group. While you can cook a roast chicken in your regular oven, cooking it on the spit will give you a delicious smoky flavour and crown you as the charcoal chicken king or queen.
Ingredients:
- 1 chicken
- Salt
- Sweet paprika
- Onion powder
- Garlic powder
- Onion powder
- Sweet soy sauce
Method:
- Sprinkle generous amounts of all of the above-mentioned dry ingredients over the chicken, both inside and out, until you can’t see any of the meat due to the amount of spices you’ve used. Drizzle sweet soy sauce over the chicken and baste to coat the entire surface.
Attaching it to the spit:
- You’ll need a skewer, 2 chicken prongs per chicken
- Pass the skewer through the chicken
- Insert one chicken prong through either side of the meat and lock in tight
- Use some butcher string to tie up the legs so they remain stuck into the body. Alternatively, wedge them into the chicken prong
Cooking time:
Many factors will influence your cooking time; however, to be on the safe side, allow around 2-2.5 hours. If it’s ready earlier, you can always push the charcoal to the side and raise the chicken to the top of the spit roaster to keep it warm but not cooking. Test the internal temperature with a cooking thermometer; once it reaches 75 degrees, it’s done.
